Cranberry Cashew Biryani

I thought I'd dedicate a little post to one of my favourite recipes. It's so easy and so tasty. I made it on Monday to bring to work for dinner on the three days this week that I work until 9pm, and it's been perfect. Okay, well, not perfect. When I made the recipe I realized at the last minute that I didn't have the requisite tomato paste on hand. So it's missing one component which, looking back, does make a difference. But still! If I'm going to focus on not being such a perfectionist, I should say that this recipe worked out smashingly.

Ingredients! Craisins, frozen peas, basmati rice, carrots, cashews,
garlic, cumin seeds, mustard seeds, salt, red pepper flakes,
turmeric and garam masala. Note the lack of tomato paste...
Dinners! For work! Oh, the convenience.

The only way in which I deviate from the instructions is that I usually double the craisins and cashews from 1/4 cup to a 1/2 cup. I also have noticed that whenever I make this recipe it only takes about 40 minutes for the rice to absorb all the water instead of 60 like the recipe predicts. But hey, I'm not going to complain about it taking less time! This recipe is super yummy and fragrant. Just remember your tomato paste...
